Recipe: Roasted courgettes with feta cheese

You know what ❓❓❓

This week it's the final of🧑🏻🍳Top chef 🧑🏻🍳 and ... we've been selected with our super simple and quick 🐟 fish recipe from last week 💪💪💪! Yes, Yes 🤩 !

I say: isn't that fantastic 🙌🏻!

Let's do it again then ❓

Oops ... for the pun, I didn't even do it on purpose 🙄!

You guys are ready for another recipe ❓

On the menu: courgettes, feta cheese, pine nuts and olive oil ... yes, yes ... that's it ‼️

I'm a big fan of using the oven at low temperature ... so we change the ingredients but keep the same type of cooking ...

Here's how to do it:

✅ Take some courgette ...

How much ??? It all depends on the size of the courgette of course 😉 !

So let's talk proportions instead: ¾ vegetables and ¼ feta!

✅ Cut the courgettes to get pieces of 3 to 4 cm long and 1 cm wide.

You can also slice your courgette into rounds ... depending on your geometric preferences 🟧🔺🔶 !

✅ Put your courgettes in a pyrex dish or other heat resistant container ... no aluminium, we agree ... I know I sometimes tend to repeat myself 😆 but a wise cook 👨🏻🍳 /cooker 🧑🏻🍳 is worth two!

✅ Take a 200g pack of feta cheese and make small 1cm cubes.

✅ Add a handful of pine nuts.

✅ Mix it all together

✅ Add a little bit of water ... the fat is for after.

✅ And hop! Into the oven, halfway up to 85% for an hour or less, depending on whether you want the courgettes to stay crisp.

👉 When it's cooked to your liking, take the dish out of the oven, let it cool down a bit and add some pepper and olive oil.

👉 It is often not necessary to add salt 🧂 , feta cheese already contains a lot of it ...

Olive oil should be organic if possible, extra virgin and cold pressed (or mechanical pressed) ...

This must be indicated on the bottle otherwise it means the oil has been heated and then it's ruined 🙈 ... it has lost all its good properties 🙈🙈🙈 .

This recipe can be embellished with various aromatic herbs like cumin (small anise) or turmeric as well as a little coconut milk or cream for example ...

Personally, I prefer it as it is, but then ... tastes and colours, eh 😉 ???

Just like last week's recipe, this dish is easy to prepare ✌️ and in no time it's ready!

Plus it's good 😋 and it's healthy 😃!
